Many of the popular waterfalls in Ontario have been developed into tourist attractions. You can get out of your car, walk 2 mins, and you're there! This takes the fun out of it for some people.
I'm just starting to create a list of waterfalls that are found at the end of a longer hike, or can be combined with a hike that continues beyond the falls. (Bruce Trail doesn't count, as it is ubiquitous along the Niagara Escarpment) And by 'longer', my threshold at this point is as low as about a kilometre. Not too much, I know, but enough to get you out in the woods.
